GQ
A collaborative feature for GQ showcasing four signature cocktails crafted with four distinct tequilas. Each recipe was designed to highlight the character of its spirit while reflecting a modern, elevated approach to mixology.
FOOD & WINE
Commissioned by Food & Wine, this project brought together five leading mixologists to reinvent the beverage program at Great Room. David Paz contributed a series of cocktails rooted in his Alquimia Xamánica concept, with “Mayan Warrior” emerging as the hero—an elevated fusion of mezcal, coconut, xoconostle, and lavender.
A Food and Travel feature highlighting innovative cocktails created live by top bartenders. David Paz presented two signature drinks: “Piper Auritum,” a whisky forward blend with white cacao, peach tea, and eucalyptus, and “Ixi’im,” made with pox, Aperol, Licor 43, citrus, egg white, and blue corn. Both were introduced as part of The Great Room Tales’ new cocktail program.

A contribution to the Zero Proof movement, an editorial exploration of the rise of non-alcoholic craft cocktails led by some of the world’s most influential bartenders. David Paz participated in this project by sharing insight and creative perspectives on modern mindful drinking, helping highlight the global shift toward sophisticated no-proof cocktail culture.
