Based in Paris, David Paz has become a recognized figure within the international bartending community, particularly in Mexico and France, where his work has shaped the creative and cultural landscape of modern mixology. With a formal degree in gastronomy, his foundation in culinary technique has consistently informed his approach behind the bar one that blends precision, flavor intelligence, and contemporary design.
David’s career highlights include formative roles at globally acclaimed venues such as Licorería Limantour, ranked among The World’s 50 Best Bars, where he refined his understanding of world-class cocktail culture. In Mexico City, he spent several years managing the iconic Xaman, a bar celebrated by The Cocktail Lovers for its spiritual, sensory driven approach to drinking. His international trajectory continued in France, where he contributed to the acclaimed La Mezcaleria Paris, and later joined Bonhomie, recognized by Tales of the Cocktail with a nomination for Best Restaurant Bar a testament to its elevated, Mediterranean inspired beverage program.
David also spent three years managing Colonia, an exclusive and highly curated bar in Paris known for its refined hospitality and forward-thinking creative direction. His experience extends beyond the bar as well: he previously served as Brand Ambassador for Ojo de Dios Mezcal in France, helping introduce and elevate the spirit in European markets through education, events, and high-level partnerships.
Across the globe, David has collaborated with a wide range of brands from luxury labels to innovative lifestyle companies creating bespoke cocktails for events, hotels, restaurants, and private clients. His work has been highlighted in international publications, books, films, television programs, and digital media, positioning him as a creative force whose influence crosses both industry and cultural boundaries.
Today, David Paz serves as the Global Brand Ambassador for the Spirit Brothers Portfolio, representing a collection of premium spirits and bringing his expertise in mixology, storytelling, and experiential hospitality to audiences worldwide. His mission remains clear: to continue shaping the future of modern drinking culture through craftsmanship, creativity, and a constant exploration of flavor.
